Domestic Success: Shepherd's Pie

Today I decided to write down all the random things I cook up in my little kitchen and maybe one day I'll print them all out and give them to you all as a gift... or something.




Yesterday: Shepherd's Pie.
1lb Ground turkey; browned in a deep-ish pot
1 can corn
frozen green peas (about the same amount as the corn)
fresh mushrooms sauteed in a little butter and a lot of garlic
some chopped red ontion sauteed with the mushrooms
1 can Cream of Mushroom soup
4 large-ish red potatoes, boiled and mashed (with the skin) with 1Tbs butter and 1/4c. milk
Shreaded Medium cheddar cheese
Grated Parmesean cheese
S&P

After the turkey is cooked through + condensed CofM soup and veggies in the same deep pot. Stir till mixed. Spread the mashed potatoes nice and smooth over the top.

Cover + bake for however long... everything is cooked already so just till it's heated through. I had the oven at about 275 for about an hour.

In the last 5-8 mins, remove the lid, spread the cheddar and sprinkle the parm. Turn to Broil and let the cheese melt and brown. ***Keep an eye on it so you don't burn it!

It turned out really great and is a perfect fall 'one course' dinner.
